The best time to pick sweet corn is when the water is boiling. Over time, those sweet sugars convert to a less flavorful starch, so freshness is of the essence. For us city dwellers, without a garden, the freshest we can find is at the farmer’s market. If you receive SNAP (Supplemental Nutrition Assistance Program) benefits, you may be able to double your buying power. Many areas have programs that double your dollars for food bought at a farmer’s market.
